This is a “pumpkin pie cheesecake”. I won’t claim to have been the first person ever to do this, but I dreamed it one night, and assembled the recipe from a mashup of my usual NY Cheesecake recipe cut to half-depth, and a recipe for pumpkin pie filling from the old Joy of Cooking.
So why is this the fruits of my labors? Aside from I baked it, I mean? Well, I grew the pumpkin, roasted it, and food-processored it. And the eggs (7 total in that recipe) came from my hens.
Hooray for having a garden, and those extremely dratted hens.
